Chicken Enchiladas

 These chicken enchiladas are simply delicious! My husband loves them Actually my entire family loves them. I used chicken but you could use hamburger, steak, shrimp or whatever meat you want.

Ingredients
  1. 4 skinless, boneless chicken breast halves
  2. 1 onion, chopped
  3. 1/2 pint sour cream
  4. 1 cup shredded Cheddar cheese
  5. 1 tablespoon cilantro
  6. 1/2 teaspoon ground black pepper
  7. 1/2 teaspoon salt (optional)
  8. 1 (15 ounce) can tomato sauce
  9. 1/2 cup water
  10. 1 tablespoon chili powder
  11. 1/3 cup chopped green bell pepper
  12. 1 clove garlic, minced
  13. 8 (10 inch) flour tortillas
  14. 1 (12 ounce) jar taco sauce
  15. 3/4 cup shredded Cheddar cheese
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium, non-stick skillet over medium heat, cook chicken until no longer pink and juices run clear. Drain excess fat.
  3. Cube the chicken and return it to the skillet. Add the onion, sour cream, Cheddar cheese, parsley, oregano and ground black pepper. Heat until cheese melts. Stir in salt, tomato sauce, water, chili powder, green pepper and garlic.
  4. Roll even amounts of the mixture in the tortillas. Arrange in a 9x13 inch baking dish. Cover with taco sauce and 3/4 cup Cheddar cheese. Bake uncovered in the preheated oven 20 minutes. Cool 10 minutes before serving
  5. Recipe makes 8 servings Change Servings

    your recipe looks very very similar to mine too! I think the only thing I do different is dip the tortillas in the sauce first and then roll! Messy but oh so good……….

      Heather, it is messy. But by doing this is keeps the tortillas from cracking and breaking when you fill and roll them. 🙂

    They do sound good. I just made a chicken enchilda recipe when we had a house full for the holidays, and it was a big hit. 🙂
