Loaded Mashed Potatoes

My family loves potatoes of any kind. But, different flavored mashed potatoes are among our favorite in the group. For me, it’s loaded mashed potatoes! I drool every time I think about making them.

Basically, for loaded mashed potatoes, you can add any of your favorite ingredients. Well, within reason. I added bacon, extra sharp cheddar cheese, pepper jack cheese,sour cream, crushed pepper flakes, butter, crushed black olive and chives which give a nice onion flavor. For the black olives, and those of you that do no like black olives, they actually are perfect in potato dishes. I’m not a big fan of black olives myself. But I do love the flavor addition in a couple of my famous potato side dishes.

 Simply start off by washing and drying off 5-6 medium to large red potatoes, leave the skin on. Place on a cookie sheet and cook 45-60 minutes.

Once the potatoes are tender, place them in a large bowl, add the butter and smash them using a potato smasher or whatever you have on hand. You can cut and cube them as well.

Add the salt, pepper, onion powder, garlic and continue to smash the potatoes.

Add the black olives, bacon, and pepper flakes, Smashing until all the ingredients are incorporated.

Add the chives and incorporate well.

Add the sour cream, again incorporating well.

Add the cheese, extra if you’d like 🙂 Serve and enjoy.

 

If you have left over loaded mashed potatoes, the next day you can make Loaded Potato Cakes

Ingredients
  1. 5-6 meduim-large red potatoes
  2. 1 stick of butter
  3. 1 teaspoon salt
  4. 1 teaspoon black pepper
  5. 1 teaspoon crushed red pepper flakes
  6. 1 teaspoon onion powder
  7. 1 teaspoon garlic powder (not garlic salt)
  8. 1/4 cup crushed black olives
  9. 1 cup crumbled bacon
  10. 1/4 cup fresh chives
  11. 1/4 cup shredded extra sharp cheddar cheese
  12. 1/3 cup shredded pepper jack cheese
  13. 1 cup of sour cream
