Easy Banana Pudding

Do you know one of the cheapest fruits you can buy in the grocery store is bananas? Yet, it’s one of the most delicious and healthiest fruits as well. From Vitamin B6 to Potassium, bananas are a healthy choice for dessert. Since bananas already contain sugars, usually none is needed to satisfy your sweet tooth. Below is a recipe that not only with makes the kiddos happy, but parents happy as well, and is so easy you will be embarrassed to share the recipe.

Ingredients:

  • 3 medium ripe bananas, sliced
  • 1 large box sugar-free instant Vanilla pudding
  • Fat-free cool whip
  • Fat-free vanilla wafers

Directions:

Make your pudding first. Instant pudding is easier, faster to make, and taste just as good as if you made it yourself. Since there are so many kinds to choose from, go for either vanilla or banana flavor if you want your banana pudding extra banana-ie (you know what I mean). The sugar-free instant pudding is just as good as the others, so don’t give your kids extra sugar (you know they don’t need it). The bananas and cool whip will add just enough.

Follow directions to make the pudding, and whisk the pudding mix and milk for 3 good minutes (or whatever the directions tell you) or until stiff and your arm feels like it is about to fall off. Or take the easy route and bring out your hand mixer out for this step.

Note: whipping by hand constitutes an award and allows you to eat 2 bowls of pudding.

Next, in a small trifle dish (any glass dish is fine just so that you can see the pretty layers), arrange sliced bananas, vanilla wafers, pudding, and cool whip. Repeat layers ending with cool whip and topping with crushed vanilla wafers.

Note that it doesn’t say how many banana slices or how many vanilla wafers because this is up to you (gasp! – you can do this!). Typically an even layer is sufficient, but if you like yours with extra bananas or no wafers, go for it. No one is going to be judging, except for maybe your kids, and let’s be honest, they don’t get to judge – you’ve changed their dirty diapers.
